I was in Rishikesh, India for the month of December 2019 and while there I was a regular at the German Bakery in town, eating vegan chocolate peanut butter balls every other day. Now that I'm in Kathmandu I've been searching for the chocolate balls I had in Rishikesh. (They're that good!)
After looking all over this past month, today I finally went out and got the ingredients to make them myself –– I got sort of close but my version are too sweet so I'll have to try again in the next couple weeks.
Here's my 'recipe' although I didn't measure anything so I can't be exactly sure how much of each ingredient I used –– let me know if you try making these and what you would change to improve them!
-1 cup cocoa powder
-1 cup crushed peanuts
-2 cups blended almonds (blend with 1/2 cup coconut milk)
-1 cup peanut butter or chocolate peanut butter spread
-1/8 cup brown sugar (melt in a saucepan with 3 tbsp coconut oil)
Combined everything in a bowl and then separate into 1 inch balls.
- melt 1 cup semi sweet chocolate chips in sauce pan (the chocolate chips I bought turned out to be condensed cocoa powder chips and not pure chocolate)
Dip the balls in the chocolate you've melted and then store in the freezer for at least 1 hour. Transfer to the fridge to store up to two weeks.
