From pre-colonial Mexican culture to Italian nouvelle cuisine.
Insects are making a comeback in our food culture thanks to their high protein intake and low environmental impact.
Not only proteins, they are also rich in Vit B12, Iron and Calcium and consume less water and feed, producing less C02 than any other animal species.
I photographed traditional insect gatherers in Mexico, where chipulines, small grasshoppers, are considered prized food both in indigenous culture and in the best restaurants in Mexico City. Up to the first insect producers in Italy, in the province of Padova, the Bozzaotra twins.
