The process of making traditional Matsa bread for the Jewish high holiday of Passover.Shmura, or guarded Matza, is prepared under tight supervision. From the moment the dough is made it has just 18 minutes to pass all stations along the line before being baked.
The importance of the heist is to prevent the dough from rise or leaven, as a sign for the sense of urgency felt by the Israelites as they fled from the Egyptians, Jewish religion forbids eating leavened grain products during the entire holiday.
Passover commemorates the the liberation by God of the Israelites from slavery in Egypt as portrayed in the book of Exodus.
