The cultivation of potatoes, originating in the area between Peru and Bolivia approximately 6,000 and 10,000 years ago, has been the food support par excellence in South America and it was from this region that it spread to the rest of the world.

This photographic essay reveals the profound intimacy that exists among the peasants, the land, the crops and the corresponding consumption.

It is a reminder of the difficulty of working with the land and cultivating a crop constitues one of the humanitys great food sources.
